Here’s a vibrant and incredibly refreshing salad to enjoy all summer long! Ingredients

  • 2 large English cucumbers, quartered lengthwise, seeded and sliced into 1/2-inch pieces
  • 3 medium tomatoes, seeded and cut into 1/2-inch pieces
  • 1/2 medium red onion, or 1 small onion, coarsely chopped
  • 1/2 cup crumbled feta cheese
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh dill, divided, loosely packed, plus a few sprigs for garnish
  • 3/4 cup Greek yogurt, fat-free, low-fat or regular
  • 1-2 tablespoons lemon juice, to taste
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the chopped cucumber, diced tomatoes, finely chopped red onion, crumbled feta cheese, half of the fresh dill, and the minced garlic. Gently toss these ingredients together until they are well combined.
  2. In a separate small bowl, whisk together the Greek yogurt, 1-2 tablespoons of fresh lemon juice (starting with 1 tablespoon and adding more to taste), the remaining half of the fresh dill, a pinch of salt, and freshly ground black pepper until the dressing is smooth and well blended.
  3. Pour the creamy Greek yogurt and dill dressing over the prepared vegetable mixture in the large bowl.
  4. Using a large spoon or spatula, gently toss all the ingredients together until every piece of vegetable and feta is thoroughly and evenly coated with the delicious dressing.
  5. Taste the salad and adjust the seasoning further with additional salt, black pepper, or more lemon juice if you desire a brighter or tangier flavor profile.
