Ingredients

  • 1 medium head cauliflower, cut into approximately 6 “steaks,” each 1/2 to 3/4-inch thick
  • 1 cup panko
  • 1/4 cup seasoned Italian dry breadcrumbs
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup olive oil, or as needed
  • Salt and freshly ground black pepper, to taste
  • Cooking spray
  • 1 jar (24-ounce) marinara sauce
  • 1 1/2 cups freshly shredded Mozzarella cheese

Instructions
