  • 1 large head cauliflower
  • 3-4 tablespoons canola oil
  • 2 tablespoons butter
  • Salt and freshly ground black pepper
  • 1 medium shallot, finely chopped
  • 1 tablespoon all-purpose flour
  • 2 teaspoons dry mustard
  • 8 ounces shredded sharp Cheddar cheese
  • 1/2 cup good beer
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon chopped fresh chives

Instructions

  1. Preheat oven to 375 degrees F (190 C).
  2. Cut the head of cauliflower into thick slices, each approximately 3/4 to 1-inch thick.
  3. Brush the slices with canola oil, season with salt and black pepper, and place on a baking sheet.
  4. Roast for 25-35 minutes or until softened and the stem can be easily pierced with a knife.
  5. While the cauliflower is roasting, make the sauce.
