Ingredients

  • Cooking spray, or oil for baking pan
  • Salt
  • 1 large head green cabbage, 2 1/2 to 3 pounds

Filling

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped (approximately 1 heaping cup)
  • 1 pound hot Italian sausage, casings removed
  • 3/4 pound ground chuck
  • 3/4 cup converted white rice, (parboiled rice)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup water
  • 1/4 cup chopped fresh parsley
  • Freshly ground black pepper, to taste

Sauce

  • 1 can (28-ounce) crushed tomatoes
  • 1/2 cup water, to rinse out the crushed tomatoes can
  • 2 tablespoons tomato paste
  • 1 tablespoon Calabrian hot pepper paste, or 1 teaspoon crushed red pepper flakes
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13 x 9-inch baking dish by spraying with cooking spray or lightly brushing with oil.

Prep the Cabbage

  • In a large soup pot, heat 4 quarts of generously salted water to boiling over high heat.
  • Carefully place the whole cabbage head in the boiling water. Cook for 10 minutes to soften the leaves, making them pliable for rolling.
  • Transfer the blanched cabbage to a colander. When cool enough to handle, carefully peel off 12 of the largest outer leaves.

Cook the Rice

  • Add the uncooked white rice to the same salted water used for blanching the cabbage leaves. Bring the water back to a boil and cook for 6-7 minutes, or until the rice is cooked al dente (meaning it still has a slight bite to it, not entirely soft). Drain the rice in a fine-mesh sieve and rinse thoroughly under cold tap water to stop the cooking process and cool it down. Drain again completely. Transfer the cooled rice to a large mixing bowl and set aside.
  • Prepare the cabbage leaves for rolling: without removing too much of the leaf, cut the thick, fibrous ribs from the base of each leaf in an upside-down V-shape. This creates two “flaps” that will allow you to fold the leaves easily around the filling.

Filling

  • Heat the olive oil in a medium skillet over medium-high heat. Add the finely chopped onion, reduce the heat to medium-low, and cook for 3-4 minutes, just until the onion softens and becomes translucent. Remove from heat. Transfer half of the softened onion to the large mixing bowl containing the rice.
  • To the bowl with the rice and half of the onion, add the crumbled hot Italian sausage, ground chuck, Parmesan cheese, 1/2 cup water, chopped parsley, 1 teaspoon salt, and freshly ground black pepper to taste. Mix all ingredients thoroughly until well combined.
  • For even portions, divide the filling into 12 equal sections. This can be easily done by first dividing the mixture into quarters in the bowl, then dividing each quarter into thirds.
  • Place an even amount of the prepared filling in the center of each cabbage leaf, near the “V” notch. Starting at the bottom of the leaf (the end with the “V”), fold the “flaps” over the filling, then fold in the sides, and finally, roll the leaf up tightly into a compact cylinder. Place the finished roll seam-side down in the prepared baking dish and repeat with the remaining cabbage leaves and filling.

Sauce & Baking

  • To the remaining onions in the skillet (no need for another bowl!), add the crushed tomatoes, the 1/2 cup water used to rinse out the can, tomato paste, Calabrian hot pepper paste (or crushed red pepper flakes), minced garlic, Italian seasoning, and salt and black pepper to taste. Stir all the sauce ingredients together until well combined, then pour the entire sauce evenly over the filled cabbage rolls in the baking dish.
  • Cover the baking dish securely with aluminum foil. Bake in the preheated oven for approximately 1 hour to 1 hour and 15 minutes, or until the cabbage rolls are cooked through and the internal temperature of the filling reaches 165 degrees F (74 degrees C).
