Crafting the Perfect Champagne Risotto: An Effortless Elegance

Risotto, often perceived as a time-consuming dish requiring constant stirring, can be surprisingly simple to prepare with this “almost hands-off” method. You’ll achieve that coveted creamy texture and al dente bite without the painstaking effort, leaving you more time to enjoy your evening.

Steps for Your “Set-and-Forget” Risotto:

  • Begin your risotto journey on the stovetop, as most traditional recipes dictate. This initial sautéing of aromatics and rice is crucial for flavor development.
  • Once the rice is lightly toasted and deglazed with champagne, add the majority of your heated chicken broth—all but a small reserved amount.
  • Bring the mixture to a gentle boil, then remove the saucepan from the heat. Cover it tightly and transfer it to a preheated oven to bake for approximately 20 to 25 minutes. This ingenious technique allows the rice to absorb the liquid evenly without constant attention.
  • It’s wise to check on your risotto once or twice during baking to ensure it doesn’t dry out. If it appears too dry, a splash more warm broth can be added.
  • Upon removing it from the oven, stir in the remaining broth, a touch of heavy cream for extra richness, and freshly grated Parmesan cheese. This final stirring incorporates air and creates that signature creamy consistency.
  • Your risotto is perfectly done when the grains are tender yet retain a slight resistance to the bite—the hallmark of true al dente.

Selecting and Preparing Premium Sea Scallops

The success of your Pistachio Crusted Scallops hinges on the quality and preparation of the scallops themselves. Choosing the right sea scallops is paramount to achieving a beautiful, golden crust and a tender, sweet interior.

Essential Tips for Buying Sea Scallops:

  • Opt for Dry-Packed Scallops: Always seek out “dry-packed” sea scallops. These are scallops that have not been treated with sodium tripolyphosphate (STP), a chemical solution often used to plump them up with water. Wet-packed scallops release excess water during cooking, making it nearly impossible to achieve a proper sear and leading to a rubbery texture. Dry-packed scallops will have a slightly off-white, almost beige color, whereas wet-packed scallops will appear bright white.
  • Consider Sourcing: While most sea scallops are mechanically harvested, you can sometimes find “diver-caught” scallops, which are hand-harvested and typically free of grit. Regardless of harvesting method, a thorough rinse is always recommended.
  • Proper Cleaning and Drying: Before cooking, gently rinse your scallops under cold running water. It’s crucial to remove the small, tough side muscle (sometimes still attached), which is chewy and unappetizing. Pat them exceptionally dry with paper towels. Any residual moisture will steam the scallops instead of searing them, preventing that desirable crust from forming. The dryer they are, the better they will sear.
  • Size Matters: For this recipe, aim for large sea scallops, which offer a substantial, satisfying bite and are easier to crust and sear evenly.

The Art of the Pistachio Crust and Perfectly Roasted Asparagus

The pistachio crust adds a sophisticated textural and flavor dimension to the sweet scallops. I prefer to hand chop the pistachios for this dish, as a mini food processor can often pulverize them into a paste, losing that delightful crunch. A manual nut chopper or a sharp chef’s knife works best to achieve a finely chopped, yet still identifiable, pistachio texture. This nutty, slightly salty coating, enhanced by bright lemon zest and pungent black pepper, forms a fantastic counterpoint to the tender scallops.

For the accompanying asparagus, roasting is undoubtedly the method that brings out its best flavor. High heat caramelizes the natural sugars in the asparagus, resulting in vibrant green spears with a tender-crisp texture and a subtly sweet, earthy taste. A simple dressing of good quality olive oil, a pinch of salt, and a grind of fresh black pepper is all it needs to complement the rich risotto and crusted scallops without overpowering them.

Tailoring Your Special Meal

Should your guest have a nut allergy, fear not! You can easily adapt this dish. Consider using the vibrant blackening spice mixture from a Blackened Halibut recipe instead of the pistachio crust. The bold, spicy notes would provide a wonderful contrast to the rich, creamy champagne risotto.

To complete this romantic culinary experience, begin your meal with a refreshing mixed baby green salad, lightly dressed with a classic balsamic vinaigrette. And for a truly indulgent finale, a store-bought tiramisu offers a delightful, effortless dessert that perfectly caps off an elegant evening. Prepare to savor every bite and enjoy the magic you’ve created together.

Happy Valentine’s Day, or happy any day you choose to celebrate with exceptional food!

Equipment

  • Wusthof Chef Knife
  • Cutting Board
  • Stainless Steel Skillet
  • Rimmed Sheet Pan
  • Nonstick Skillet

Ingredients

Risotto

  • 2 ¼ cups chicken broth, divided
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • ½ medium onion, finely chopped (about 1 cup)
  • 2 cloves garlic, minced
  • ¾ cup Arborio rice
  • ½ cup dry champagne
  • Salt and freshly ground black pepper, to taste
  • ¼ cup heavy cream
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, plus more for garnish

Scallops

  • ¼ cup shelled roasted and salted pistachios, finely chopped
  • 1 teaspoon lemon zest
  • Freshly ground black pepper, to taste
  • 1 1/2 tablespoons unsalted butter, divided
  • 8-10 large sea scallops, washed and patted dry
  • Salt, to taste

Asparagus

  • 1 bunch asparagus, tough ends trimmed
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

Risotto

  1. Preheat oven to 400°F (200°C). Place chicken broth in a saucepan and bring to a simmer. Reduce heat to low and keep warm.
  2. Heat olive oil and 1 tablespoon butter over medium-high heat in an oven-safe saucepan. Add the onion, reduce heat to medium and cook for 4-5 minutes or until softened, being careful not to brown it. Add garlic and Arborio rice and cook for 1-2 minutes or until slightly translucent, ensuring it doesn’t brown. Pour in the dry champagne and cook, stirring until almost entirely evaporated.
  3. Stir in 2 cups of the warm chicken broth and bring the mixture to a boil. Season with salt and black pepper to taste. Remove from heat, cover tightly, and transfer the saucepan to the preheated oven. Bake for 20-25 minutes, or until the liquid is absorbed and the rice is tender with an al dente bite. Do not allow the rice to become completely dry.
  4. Remove from the oven. Stir in the remaining ¼ cup chicken broth, heavy cream, freshly grated Parmesan cheese, and chopped fresh parsley. Mix until creamy and well combined.

Scallops

  1. In a small bowl, combine the finely chopped pistachios, lemon zest, and freshly ground black pepper. Set this mixture aside.
  2. Heat the remaining 1.5 tablespoons of unsalted butter in a nonstick skillet or sauté pan over medium-high heat until shimmering. Season the washed and thoroughly patted dry scallops generously with salt and black pepper. Place the scallops in the hot skillet, ensuring not to overcrowd the pan (cook in batches if necessary). Cook for approximately 1-2 minutes on the first side, or until a beautiful golden-brown crust forms. Flip the scallops and cook for an additional 1 minute, basting them with the melted butter in the pan. Scallops are properly cooked when they are slightly firm to the touch and opaque throughout.
  3. Using tongs, carefully remove the seared scallops from the pan. Immediately and lightly dredge each scallop in the prepared pistachio mixture, gently pressing to ensure the crust adheres evenly to both sides.

Asparagus

  1. While the oven is still at 400°F (200°C), toss the trimmed asparagus spears with olive oil, salt, and pepper on a rimmed baking sheet. Roast for 6-8 minutes, or until the asparagus reaches your desired level of tenderness and crispness.
  2. To serve, elegantly spoon a portion of the creamy champagne risotto onto each plate. Arrange the pistachio-crusted scallops on top of the risotto, and artfully place the roasted asparagus spears alongside. Garnish generously with additional chopped fresh parsley for a final touch of color and freshness.
