  • 1 medium onion, finely chopped
  • 1 large bell pepper, yellow, red or green, chopped
  • 4 cloves garlic, chopped
  • 1 pound lean ground beef, bison, turkey or chicken
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chipotle powder
  • 1 can (10-ounce) diced tomatoes with green chiles, undrained
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1/4 cup chopped cilantro
