Turn the slices over, salt again, and allow them to sit for another 15 minutes to draw out excess moisture.
  3. Using fresh paper towels, blot the vegetables as dry as possible to remove all excess liquid. Set aside.
  4. While the vegetables are draining, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the finely chopped onions, reduce heat to medium, and cook for 5-7 minutes, or until the onions begin to soften and become translucent.
