Ingredients

Polenta

  • Cooking spray
  • 3 cups chicken broth
  • 1 cup half-and-half
  • 3/4 cup polenta
  • 1 teaspoon salt
  • Freshly ground black pepper
  • 3 tablespoons butter
  • 1 cup freshly grated Parmesan cheese

Meatballs

  • Cooking spray
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons Marsala wine
  • 1/4 cup milk
  • 1/2 cup panko bread crumbs
  • 1 large egg, beaten
  • 1 teaspoon salt
  • Freshly ground black pepper
  • 1 pound ground chicken, or turkey

Sauce

  • 2 tablespoons butter
  • 1 package (8-ounce) sliced Cremini (baby Portobello) mushrooms
  • 1/4 cup all-purpose flour
  • 3/4 cup Marsala wine
  • 2 cups chicken broth
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • salt and freshly ground black pepper, to taste

Instructions

Polenta

  • Preheat oven to 350 degrees F (175 C). Spray a 2-quart baking dish with cooking spray.
  • Combine chicken broth, half-and-half, polenta, salt, and black pepper to taste in the baking dish. Stir well to combine all ingredients.
  • Microwave the uncovered dish on high for 3 minutes. Stir again thoroughly, then cover the dish and place it in the preheated oven.
  • Bake for 30-35 minutes, or until all the liquid has been fully absorbed and the polenta is creamy. Stir in the butter and Parmesan cheese until melted and incorporated. Serve immediately with the meatballs.

Meatballs

  • Lightly spray a non-stick baking sheet with cooking spray. Set aside.
  • Heat olive oil and butter in a small sauté pan over medium-high heat. Add the finely chopped onion, reduce heat to medium, and cook for 6-7 minutes until the onion is tender and translucent. Add minced garlic and cook for an additional 15 seconds until fragrant. Transfer half of the cooked onions to a mixing bowl and remove the remaining onions in the pan from heat temporarily. Allow the onions in the bowl to cool for 5 minutes before adding other ingredients.
  • To the mixing bowl with the cooled onions, add half of the fresh parsley, 2 tablespoons of Marsala wine, milk, panko bread crumbs, beaten egg, salt, and black pepper. Mix these ingredients thoroughly until well combined. Then, add the ground chicken (or turkey) and mix gently but completely, ensuring all ingredients are evenly distributed without overworking the meat.
  • Form the chicken mixture into 12 large, uniform meatballs and place them onto the prepared baking sheet. Bake for 20 minutes, or until a meat thermometer inserted into the center of a meatball registers at least 165 degrees F (74 C).

Sauce

  • While the meatballs are baking, return the pan with the remaining onion-garlic mixture to medium-high heat. Add the butter to the pan. Once the butter is melted, add the sliced Cremini mushrooms. Reduce the heat to medium and cook for 5-6 minutes, stirring occasionally, until the mushrooms are beautifully browned and tender.
  • Sprinkle the all-purpose flour over the mushrooms and cook for 1-2 minutes, stirring constantly to create a roux, ensuring no raw flour taste remains.
  • Pour in the Marsala wine, whisking constantly for 1 minute to deglaze the pan and ensure the sauce remains smooth.
