Instructions

  1. Bring a large saucepan of salted water to a boil. Add the orzo and cook to al dente (pasta should still have some bite). Drain into a sieve and run under cold running water to cool completely. Drain very well, shaking off excess water.
  2. In a large mixing bowl, combine the cooled orzo, halved cherry tomatoes, chopped yellow bell pepper, finely chopped red onion, diced English cucumber, chopped fresh parsley, chopped fresh oregano, and halved Kalamata olives.
  3. In a separate small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, minced garlic, salt, and freshly ground black pepper to taste until well combined.
  4. Pour the dressing over the salad ingredients and stir gently until everything is evenly coated.
  5. Gently fold in the crumbled feta cheese.
  6. Serve immediately, or chill for at least 30 minutes for flavors to meld. Garnish with parsley sprigs and lemon wedges before serving.
