What is a Tagine? Exploring Moroccan Cuisine

The term “tagine” often evokes images of exotic Moroccan markets and intricate culinary traditions. While it sounds wonderfully exotic, at its heart, a tagine is essentially the Moroccan equivalent of a slow cooker. It’s a remarkable cooking method and a fascinating piece of cookware that has shaped North African cuisine for centuries.

A traditional tagine is both a specific dish and the distinctive two-piece earthenware pot in which it is cooked. The vessel consists of a shallow, circular base and a tall, conical lid that fits snugly onto the base. This unique design is incredibly clever, especially in a region where water conservation is crucial. As the food cooks, steam rises, condenses on the cool interior of the conical lid, and then drips back down into the dish. This continuous basting process ensures that every drop of precious moisture and flavor is retained, resulting in incredibly tender meats and vegetables imbued with deep, complex aromas. It’s this ingenious cycle that makes tagine dishes so succulent and flavorful, much like the slow, gentle cooking action of a modern slow cooker, which effectively mimics the tagine’s environment.

Mastering Slow Cooker Moroccan Chicken Tagine: A Step-by-Step Guide

Creating this flavorful Slow Cooker Moroccan Chicken Tagine is simpler than you might imagine. Follow these steps to achieve a perfectly tender, aromatic, and deeply satisfying meal that tastes like it came from a gourmet kitchen.

Key Ingredients for Your Moroccan Chicken Tagine:

The magic of Moroccan cuisine lies in its vibrant spice blends and fresh produce. For this tagine, we’ll combine:

  • Chicken Thighs: Bone-in, skin-on chicken thighs are ideal for slow cooking as they remain incredibly moist and flavorful, contributing richness to the sauce.
  • Butternut Squash: This autumnal favorite adds a delightful natural sweetness and a smooth, creamy texture that perfectly complements the savory elements. Choose a small squash for roughly 2 cups cubed.
  • Chickpeas (Garbanzo Beans): A fantastic source of plant-based protein and fiber, these legumes contribute to the hearty, comforting nature of the dish and absorb the tagine’s complex flavors beautifully.
  • Olives: Pitted Kalamata olives bring a wonderfully briny, salty counterpoint to the sweetness of the squash and golden raisins, adding depth to the flavor profile.
  • Aromatics: Finely chopped onion and minced garlic form the essential aromatic base, providing foundational layers of flavor.
  • Plum Tomatoes: Seeded and chopped, plum tomatoes add a touch of acidity, freshness, and color, helping to create a luscious sauce.
  • Golden Raisins: A signature Moroccan touch, these small fruits provide a delicate, sweet counterpoint that perfectly balances the savory and earthy spices, enhancing the overall complexity.
  • Chicken Broth: This liquid base ensures everything cooks perfectly and infuses the entire dish with a rich, savory backdrop.
  • Moroccan Spice Blend: A harmonious and balanced mix of ground coriander, cumin, ginger, turmeric, salt, cinnamon, and a hint of cayenne pepper for warmth. This blend is key to achieving that authentic Moroccan taste.
  • Olive Oil: Used for browning the chicken, it adds a touch of Mediterranean richness to the dish.
  • Fresh Cilantro and Lemon Wedges: Essential for garnish and adding a burst of fresh, herbaceous brightness and a zesty finish right before serving.

Preparation and Cooking Instructions:

  1. Layer the Vegetables and Legumes: Begin by combining the peeled and cubed butternut squash, chopped plum tomatoes, finely chopped onion, minced garlic, drained and rinsed chickpeas, chicken broth, and golden raisins directly in the bottom of your slow cooker. If you prefer your halved Kalamata olives to retain more of their distinct shape and vibrant black color, you can reserve them to add closer to the end of the cooking time. However, incorporating them now allows their briny flavor to meld more deeply and beautifully with the entire dish.
  2. Craft Your Aromatic Spice Blend: In a small, separate bowl, thoroughly whisk together the ground coriander, ground cumin, ground ginger, ground turmeric, salt, ground cinnamon, and a pinch of cayenne pepper. This expertly blended mixture is the very heart of your Moroccan flavor profile, promising a burst of warmth and aroma.
  3. Season and Perfectly Brown the Chicken: Heat the olive oil in a large nonstick skillet or a sauté pan over a steady medium-high heat until it shimmers. Take approximately half of your freshly prepared spice mixture and sprinkle it generously and evenly over the bone-in, skin-on chicken thighs. Now, stir the remaining half of the spice mixture into the vegetable and chickpea combination already waiting in the slow cooker, ensuring all the ingredients are well coated and infused with the spices. Once the skillet is hot, carefully place the seasoned chicken thighs, skin-side down, into the hot oil. Brown them thoroughly for about 6-8 minutes until the skin is beautifully golden and desirably crispy. This crucial browning step not only adds significant depth of flavor but also improves the texture of the chicken, making it more appealing. Turn the chicken over and brown the other side for an additional 3-4 minutes, allowing the skin to develop a perfect crispness and the flavors to further intensify in the hot, spiced fat.
  4. Combine Ingredients in the Slow Cooker: Once the chicken thighs are wonderfully browned on both sides, carefully transfer them from the skillet and nestle them on top of the seasoned vegetable mixture in the slow cooker. Be sure to pour any delicious accumulated pan drippings and aromatic, spiced fat from the skillet directly over the chicken and vegetables – this is pure flavor gold that you don’t want to waste!

  6. Slow Cook to Perfection: Securely cover your slow cooker with its lid and set it to cook on the High setting for 4 hours, or on the Low setting for 8 hours. The gentle, prolonged cooking time is key to allowing all the complex Moroccan flavors to meld and deepen, and for the chicken to become incredibly tender, practically falling off the bone, while the vegetables soften perfectly.

  8. Add Fresh Cilantro: Once the slow cooking cycle is complete and the tagine is perfectly cooked, stir the freshly chopped cilantro into the butternut squash and chickpea combination in the slow cooker. This adds a wonderful burst of fresh, herbaceous flavor and vibrant color just before serving.
  9. Serve with Flair: To serve, carefully spoon the rich butternut squash and chickpea mixture onto a large, elegant serving platter. Artfully arrange the tender chicken thighs on top of the vibrant mixture. Garnish generously with additional fresh cilantro sprigs and bright, zesty lemon wedges for a truly beautiful presentation and a final, refreshing zing. Serve immediately and delight in your homemade Moroccan feast! You’ll look and feel like a global culinary superhero!

A note on olives: While adding them at the end preserves their vibrant black color and firm texture, I find that incorporating them at the beginning allows their rich, briny essence to permeate the entire dish, deepening the overall flavor profile. It’s a matter of preference, but for maximum flavor integration, I highly recommend adding them early!

The result is a symphony of sweet, savory, and spicy notes, with incredibly tender chicken and melt-in-your-mouth vegetables. It’s truly a dish to savor, perfect for sharing with loved ones.

Serving Suggestions for Your Moroccan Tagine

This flavorful and aromatic Moroccan Chicken Tagine pairs beautifully with a variety of sides that complement its rich and complex profile. Consider serving it with:

  • Couscous: A classic Moroccan accompaniment, light and fluffy couscous is perfect for soaking up all the delicious, spiced juices of the tagine. Plain couscous works wonderfully, or you can elevate it with some fresh herbs and a drizzle of olive oil.
  • Basmati or Brown Rice: For a gluten-free option, or simply a different texture, long-grain rice such as Basmati or a wholesome brown rice provides a neutral base that lets the tagine’s flavors shine.
  • Crusty Bread: A warm, crusty loaf of bread is ideal for dipping into the rich and flavorful sauce, ensuring no drop of the delicious liquid goes to waste.
  • Simple Green Salad: A light, refreshing green salad with a bright lemon-herb vinaigrette can provide a lovely textural and flavor contrast, cutting through the richness of the tagine.
  • Yogurt Sauce: A dollop of plain Greek yogurt or a quick homemade yogurt-cucumber sauce (similar to tzatziki) can add a cool, creamy, and tangy contrast to the warm spices.

Make-Ahead and Storage Tips

This Slow Cooker Moroccan Chicken Tagine is an excellent meal for meal prepping, as the flavors often deepen even further overnight, making it even more delicious the next day.

  • Make Ahead: You can prepare a significant portion of this dish in advance. Assemble all the vegetables, chickpeas, and olives in the bottom of your slow cooker insert. Cover the slow cooker insert tightly and refrigerate it for up to 24 hours until you’re ready to cook. When it’s time for dinner, simply pull it out of the fridge, plug in the slow cooker, and let it do its magic!
  • Storage: Leftovers of the Moroccan Chicken Tagine can be stored safely in an airtight container in the refrigerator for up to 3-4 days. It makes for fantastic packed lunches or quick reheated dinners.
  • Freezing: This hearty dish freezes wonderfully! Once the tagine has completely cooled to room temperature, transfer individual or family-sized portions into freezer-safe containers or heavy-duty freezer bags. It can be stored in the freezer for up to 3 months. To reheat, thaw overnight in the refrigerator, then gently warm on the stovetop over low heat or in the microwave until heated through.

  • Crockpot Slow Cooker

Ingredients

  • 1 small butternut squash, peeled and cubed (1/2-inch cubes — approximately 2 cups)
  • 2 large plum tomatoes, seeded and chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (15-ounce) garbanzo beans (chickpeas), drained and rinsed
  • 1 cup chicken broth
  • 1/2 cup golden raisins
  • 1/2 cup pitted Kalamata olives, halved
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 4 chicken thighs, with the skin on the bone
  • 1/4 cup chopped cilantro, plus sprigs for garnish
  • Lemon wedges

Instructions

  1. Combine butternut squash, plum tomatoes, onion, garlic, chickpeas, chicken broth, and golden raisins in the bottom of a slow cooker. You may also add the halved Kalamata olives at this stage for deeper flavor integration, or closer to the end if you prefer them to retain their distinct appearance.
  2. In a small separate bowl, thoroughly combine the ground coriander, cumin, ginger, turmeric, salt, cinnamon, and cayenne pepper. This creates your essential Moroccan spice blend.
  3. Heat the olive oil in a nonstick skillet or sauté pan over medium-high heat. Take about half of the prepared spice mixture and sprinkle it evenly over the chicken thighs. Stir the remaining half of the spice mixture into the butternut squash and chickpea combination in the slow cooker, ensuring all vegetables are well coated.
  4. Once the olive oil is hot and shimmering, carefully place the seasoned chicken thighs into the skillet. Brown them thoroughly on one side for 6-8 minutes until golden and crispy. Flip the chicken over and brown the other side for an additional 3-4 minutes, allowing the skin to crisp and the flavors to develop in the hot, spiced fat.
  5. Transfer the browned chicken thighs from the skillet and place them on top of the seasoned vegetable mixture in the slow cooker. Pour any flavorful accumulated fat and drippings from the skillet directly into the slow cooker for added richness.
  6. Cover the slow cooker with its lid and cook the tagine on the High setting for 4 hours, or on the Low setting for 8 hours, until the chicken is exceptionally tender and the vegetables are soft and infused with flavor.
  7. Once cooking is complete, stir the freshly chopped cilantro into the butternut squash and chickpea combination in the slow cooker. This adds a burst of fresh, herbaceous flavor.
  8. To serve, carefully spoon the butternut squash and chickpea mixture onto a large serving platter. Arrange the tender chicken thighs on top of the mixture. Garnish generously with additional cilantro sprigs and vibrant lemon wedges for a beautiful presentation and a final fresh zing. Serve immediately and enjoy your homemade Moroccan feast!
