- 4 tablespoons olive oil, divided
- Salt and freshly ground black pepper, to taste
- 1 cup quinoa
- 2 cups water
- 1/2 cup sliced almonds
- 1 small onion, finely chopped (approximately 1 cup)
- 4 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1 large lemon, zested and juiced
- 1/4 cup chopped fresh parsley
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 375 degrees F (190°C). Toss cubed butternut squash with 2 tablespoons olive oil, and salt and freshly ground black pepper, to taste. Roast for 25-30 minutes or until tender. Keep warm.
