Ingredients

Ratatouille

  • 1 large red bell pepper, seeded and membranes removed, cut into 1-inch pieces
  • 1 large yellow bell pepper, seeded and membranes removed, cut into 1-inch pieces
  • 1 large orange bell pepper, seeded and membranes removed, cut into 1-inch pieces
  • 2 medium zucchini, quartered lengthwise then sliced into 1-inch cubes
  • 2 medium yellow squash, quartered lengthwise then sliced into 1-inch cubes
  • 5 tablespoons olive oil, divided
  • Salt and freshly ground black pepper, to taste
  • 1/2 medium red onion, chopped
  • 4 cloves garlic, minced
  • 1 large tomato, seeded and diced
  • 1/2 cup dry white wine
  • 1 can (15-ounce) crushed tomatoes
  • 1 teaspoon herbes de Provence
  • 1 large sprig fresh basil, thinly sliced (chiffonade)

Chicken

  • Cooking spray
  • 1/2 cup all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 2 large eggs, beaten
  • 1/2 cup Italian-style breadcrumbs
  • 1/2 cup panko
  • 1 cup freshly grated Parmesan cheese
  • 4 (6-8 ounce) chicken breasts, sliced horizontally into cutlets
  • Thinly sliced fresh basil for garnish
  • Lemon wedges

Instructions

Ratatouille

  1. Preheat oven to 400 degrees F (200 degrees C). Arrange bell peppers, zucchini, and yellow squash on a non-stick baking sheet (or line with non-stick aluminum foil). Drizzle with 3 tablespoons of olive oil and season generously to taste with salt and black pepper.
  2. Roast the vegetables for 15-20 minutes, or until they are softened and exhibit light browning, indicating caramelization and enhanced flavor.
  3. Meanwhile, in a deep skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the chopped red onion, reduce heat to medium-low, and cook for 6-7 minutes until the onion begins to soften and become translucent. Stir in the minced garlic and diced tomato, continuing to cook for another 3-4 minutes, or until the tomato is very soft and has broken down.
  4. Pour in the dry white wine and bring the mixture to a boil, allowing it to reduce slightly. Then, reduce the heat, add the crushed tomatoes and herbes de Provence. Simmer uncovered for 5-10 minutes, allowing the sauce to thicken and flavors to meld. Finally, gently fold in the roasted vegetables and fresh basil, and keep the ratatouille warm while you prepare the chicken.

Chicken

  1. Reduce oven temperature to 375 degrees F (190 degrees C).
  2. Prepare a nonstick baking sheet by lightly spraying it with cooking spray. Alternatively, line it with nonstick foil and then spray with cooking spray for easy cleanup.
  3. In a large zipper-top bag, combine the all-purpose flour, salt, and black pepper. In a separate shallow bowl, whisk the 2 large eggs. In a third shallow bowl, mix together the Italian-style breadcrumbs, panko, and freshly grated Parmesan cheese.
  4. Place the chicken cutlets into the zipper-top bag with the flour mixture. Seal the bag and shake gently to ensure each cutlet is thoroughly coated.
  5. One by one, remove a chicken cutlet from the flour bag, dip it completely into the beaten egg, allowing any excess to drip off. Then, dredge it generously through the breadcrumb and Parmesan mixture, pressing gently to adhere the coating. Place the coated cutlet onto the prepared baking sheet. Repeat for all chicken cutlets. Lightly spray the tops of the breaded chicken cutlets with cooking spray for extra crispness.
  6. Bake for 15-18 minutes, or until the chicken is lightly golden brown and a meat thermometer inserted into the thickest part registers an internal temperature of 165 degrees F (74 degrees C).
  7. Serve the warm, flavorful ratatouille alongside the crispy chicken scallopini. Garnish generously with thinly sliced fresh basil and serve with fresh lemon wedges for a bright, zesty finish.
