Why Cauliflower Wedges Are Superior to Steaks

For years, cutting a head of cauliflower into thick slabs, or “steaks,” has been a popular method for roasting. It promises a visually appealing presentation and a seemingly easier way to manage this cruciferous vegetable in the oven. While the idea of a cauliflower “steak” is appealing, the reality can often be frustrating. Anyone who has tried to prepare cauliflower this way knows the challenge: those delicate “steaks” tend to fall apart easily during handling and flipping, especially the thinner end pieces. This often leads to uneven cooking and a less-than-perfect presentation.

Enter the cauliflower wedge – a truly superior and much easier approach to roasted cauliflower that solves all these common issues. By cutting the cauliflower into sturdy wedges, you maintain the structural integrity of each piece, ensuring it holds its shape beautifully throughout the cooking process. You still achieve two wonderfully caramelized sides, just like with a steak, but without the annoying crumble factor. The robust core of the wedge helps it stay intact, making it far simpler to handle. To brown the remaining side, there’s no need for precarious flipping; a gentle tip of the wedge is all it takes to expose another surface to the pan’s heat, resulting in perfectly browned edges and tender interiors with minimal effort and no waste.

Ingredient Notes and Clever Substitutions:

  • Cauliflower: Select a large, firm head of cauliflower with tight florets and no significant bruising or brown spots. Its mild flavor makes it an ideal vehicle for absorbing the rich curry spices.
  • Olive Oil: A good quality extra virgin olive oil is preferred for its flavor, but for roasting, a standard olive oil works perfectly well. You don’t need your most expensive bottle here. Alternatively, flavorful oils like avocado oil or melted coconut oil make excellent substitutes, offering a slightly different aromatic profile. For an authentic Indian touch and rich flavor, consider using ghee (clarified butter), which adds a nutty depth.
  • Curry Powder: It’s important to remember that “curry powder” is not a traditional Indian spice blend but rather a creation by the British to emulate the complex flavors of Indian cuisine they encountered during colonial rule. While you can certainly create your own blend, a high-quality pre-mixed curry powder from a reputable spice shop or Indian grocery store will provide excellent results. Whether you prefer a mild, earthy blend or a fiery hot one, choose according to your taste preference.
  • Greek Yogurt: For our cilantro chutney, we highly recommend using whole Greek yogurt (5% fat). Its rich, thick consistency is ideal for creating a creamy and satisfying chutney. If you’re looking to reduce fat content, 2% or nonfat Greek yogurt can be used, though the texture will be slightly thinner. Plain regular yogurt can also be used, but you might need to strain it slightly to achieve a thicker consistency.
  • Fresh Ginger: While ginger pastes in tubes offer convenience, nothing compares to the vibrant, pungent flavor of freshly grated or minced ginger. It adds an essential aromatic kick to the chutney that cannot be replicated.
  • Jalapeño / Serrano Peppers: These chiles provide the perfect amount of heat and freshness to the chutney. When handling hot peppers, it’s always advisable to wear gloves to prevent skin irritation. For a milder chutney, remove the seeds and the white fleshy membrane (pith) from inside the peppers, as these contain most of the capsaicin responsible for the heat. For more heat, leave some or all of them in.

Step-By-Step Guide to Culinary Excellence:

  • Begin by gathering all your ingredients and prepping them as directed. This mise en place ensures a smooth cooking process.
  • Preheat your oven to a robust 425 degrees Fahrenheit (220 degrees Celsius). A hot oven is key to achieving that desirable crispy, caramelized exterior on the cauliflower.
  • Carefully trim away any excess outer leaves from your head of cauliflower. Then, with a sturdy chef’s knife, cut the cauliflower into four uniform wedges, ensuring that each piece has a portion of the core to help it hold its shape.

  • Arrange the prepared cauliflower wedges in a single layer on a large roasting pan or a rimmed baking sheet. Avoid overcrowding the pan, as this can steam the cauliflower instead of roasting it, preventing optimal browning.
  • Drizzle the cauliflower generously with olive oil (or your chosen alternative like avocado oil, melted coconut oil, or ghee), ensuring each wedge is coated as evenly as possible. The oil helps conduct heat and creates a beautiful crust.
  • Now, evenly sprinkle the curry powder over the oiled cauliflower wedges. Toss gently to ensure every surface is thoroughly coated with the aromatic spice blend. Season liberally with salt and freshly ground black pepper to taste.
  • Place the pan into your preheated oven with the largest cut sides of the wedges facing down. Roast for an initial 15 minutes. This allows one side to develop a deep golden-brown color and a delicious caramelized crust.

  • After the first 15 minutes, carefully remove the pan from the oven. Using tongs or a spatula, gently tip each wedge onto its other cut side. There’s no need for a full flip, just enough to expose a new surface for browning. Return to the oven and roast for another 15 minutes, or until the cauliflower is tender-crisp and beautifully golden on all exposed surfaces.

  • While the cauliflower is roasting, prepare your invigorating cilantro chutney. Combine all the chutney ingredients – Greek yogurt, cilantro, jalapeño (or serrano), fresh lemon juice, garlic, and minced ginger – in a mini food processor or a blender.
  • Process the ingredients until they form a smooth, vibrant green sauce. Taste the chutney and adjust the seasoning with salt as needed, ensuring a perfect balance of flavors.
  • MAKE AHEAD TIP: This flavorful cilantro chutney is perfect for meal prep! You can easily prepare it up to 1 day in advance. Simply store it in an airtight container in the refrigerator until ready to serve.

Expert Tips for Cauliflower Roasting Success

  • Optimal Curry Distribution: Through extensive recipe testing, we’ve found the best method for coating your cauliflower wedges with curry powder for maximum flavor penetration and even distribution. While combining the oil and curry powder initially might seem logical, we discovered that first drizzling the cauliflower with oil and then sprinkling the curry powder over the oiled wedges yields superior results. This two-step process ensures the spice blend adheres uniformly to every nook and cranny, creating a richer, more consistent curry flavor in every bite.
  • Dealing with Brown Spots: It’s common for cauliflower, especially if it’s been stored for a little longer, to develop small brown spots. These are primarily due to oxidation and are perfectly safe to eat, assuming the cauliflower isn’t mushy or moldy. However, if you prefer to remove them for aesthetic reasons, there’s a simple trick. Instead of cutting off large chunks of the cauliflower, which can lead to waste, use a Microplane or any fine grater/zester. Gently shave or “file” away the brown spots. This method is incredibly precise, allowing you to remove only the discolored areas without sacrificing precious cauliflower.
  • Don’t Overcrowd the Pan: For truly crispy and caramelized cauliflower, ensure there’s enough space between the wedges on your roasting pan. Overcrowding traps steam, leading to soggy, rather than roasted, vegetables. Use two baking sheets if necessary to give them room to breathe.
  • Parchment Paper is Your Friend: Lining your baking sheet with parchment paper not only makes cleanup a breeze but also prevents the cauliflower from sticking, ensuring those beautifully browned surfaces lift off easily.

Frequently Asked Questions About Curry Roasted Cauliflower

What exactly is chutney?

In the diverse world of Indian cuisine, chutney refers to a versatile condiment, typically a spread or a sauce. It’s crafted from an array of ingredients including fruits, tomatoes, fresh herbs, and vegetables like cucumber, often incorporating yogurt, as seen in our vibrant cilantro chutney. Chutneys can range dramatically in flavor, offering notes that are sweet, intensely spicy, tangy and sour, or a complex combination of all these tastes, designed to complement and enhance the main dishes they accompany.

Is cauliflower with brown spots safe to eat?

Absolutely, cauliflower with brown spots is generally safe for consumption. These spots, while not the most appealing visually, are typically a result of oxidation – a natural chemical reaction that occurs when the cauliflower is exposed to light and air for an extended period during storage. As long as the cauliflower remains firm and free from any mushiness or visible mold, it’s perfectly fine to eat. As a simple solution, you can easily “file” off these spots using a Microplane or another fine grater/zester, leaving you with perfectly fresh-looking cauliflower.

Can I substitute other vegetables for cauliflower in this recipe?

Indeed! This recipe is incredibly adaptable. If you’re looking to explore other options or simply don’t have cauliflower on hand, many root vegetables and gourds respond wonderfully to this roasting method and curry seasoning. Excellent substitutes include hearty turnips, earthy rutabaga, crisp kohlrabi, classic potatoes, sweet butternut squash, or savory acorn squash. Just be mindful that cooking times may vary slightly depending on the density and size of your chosen vegetable, so adjust roasting time until tender and caramelized.

Is this recipe suitable for vegans or those with dairy allergies?

Yes, with a simple modification! The roasted cauliflower itself is naturally vegan. For the cilantro chutney, you can easily substitute the Greek yogurt with a plant-based alternative such as plain, unsweetened almond milk yogurt or coconut milk yogurt. Ensure it’s a thick variety to maintain the chutney’s creamy texture.

What makes up a typical curry powder blend?

Curry powder is actually a blend of various ground spices, and its composition can differ significantly. Common ingredients often include coriander, cumin, turmeric (which gives it its characteristic yellow color), fenugreek, and chili peppers. Other spices like ginger, garlic, mustard seed, cinnamon, cloves, and cardamom can also be part of the blend, contributing to its complex and aromatic profile. The specific combination and proportions determine whether it’s a mild, medium, or hot curry powder.

Storage and Make-Ahead Tips

  • Storage: Any leftover curry-roasted cauliflower and the cilantro chutney should be stored separately in airtight containers in the refrigerator. The cauliflower will keep well for up to 3-4 days, and the chutney for up to 1 day.
  • Reheating: To best preserve the texture and flavor of the roasted cauliflower, we recommend reheating it in a preheated 350-degree Fahrenheit (175 degrees Celsius) oven for 12 to 15 minutes, or until warmed through and slightly crisped again. Microwaving can make it soft.

Cauliflower

  • 1 large head of cauliflower
  • 1/4 cup olive oil
  • 1 tablespoon curry powder, hot or mild
  • Salt and freshly ground black pepper, to taste

Cilantro Chutney

  • 1/2 cup Greek yogurt, preferably whole (5% fat)
  • 1 bunch cilantro, with stems, coarsely chopped

  2. Place the cauliflower wedges in a roasting pan. Drizzle with olive oil, covering the cauliflower wedges as evenly as possible with the oil.
  3. Sprinkle the curry powder over the cauliflower wedges, covering them as evenly as possible. Season with salt and black pepper.

Notes

SUBSTITUTIONS:

  • Try turnips, rutabaga, kohlrabi, potatoes, butternut squash or acorn squash.

TIPS:

  • In testing this roasted cauliflower curry recipe, I also tried combining the oil and curry powder and then drizzling it over the cauliflower. I found coating the cauliflower first with the oil and then sprinkling the curry powder over the wedges provided better distribution of the curry spice over the cauliflower.
  • If your cauliflower has brown spots on it from being stored too long, you’ll want to remove them. The easiest way to remove them so you don’t cut too much cauliflower off is to use a microplane or other fine grater/zester to shave them off.

MAKE AHEAD:

  • The cilantro chutney can be made 1 day ahead of time and refrigerated.
