  • 2 tablespoons canola oil, or as needed
  • 4 chicken thighs, bone-in with skin
  • Salt and freshly ground black pepper, to taste
  • 1 medium onion, finely chopped
  • 1 tablespoon cornstarch
  • Sesame seeds, for garnish
  • Thinly sliced scallion, for garnish

Instructions

  1. Whisk together the first 7 ingredients in a medium bowl: minced garlic, minced ginger, chicken broth, soy sauce, gochujang, mirin, and sesame oil. Set this flavorful sauce mixture aside.
  2. Heat 2 tablespoons of canola oil (or as needed) over medium-high heat in a cast-iron skillet or another heavy-bottomed pan until it shimmers. Season the chicken thighs generously with salt and freshly ground black pepper.
  3. Carefully place the seasoned chicken thighs into the hot skillet, skin side down. Cook for 4-5 minutes, or until the skin is beautifully golden brown and crispy. Transfer the browned chicken thighs to a clean plate and set aside.
