The Inspiration Behind This Hearty Vegan Curry

The culinary landscape is constantly evolving, and sometimes, external circumstances offer a gentle nudge towards new and exciting dietary explorations. In recent times, with global events impacting food supply chains, the conversation around sustainable and plant-forward eating has become more prominent. Hearing news reports about potential meat shortages encourages many to consider diversifying their protein sources and embracing more vegetarian and vegan options. For me, this wasn’t a radical shift but a return to familiar territory, having embraced a vegetarian lifestyle in a previous chapter of my life.

Living in an area where fresh, vibrant vegetables remain abundant, I’ve often found myself indulging in generous hauls from local markets. These bountiful purchases spark creativity in the kitchen, leading to delicious concoctions that make the most of nature’s harvest. This Vegan Thai Green Sweet Potato Curry was born from such an inspiration – a desire to transform a collection of fresh, colorful vegetables into a meal that feels both gourmet and incredibly comforting. It’s a perfect solution for utilizing those extra veggies in your crisper drawer, turning them into a delectable, guilt-free feast that supports both your well-being and a more sustainable way of eating.

Crafting Your Own Vegan Thai Green Sweet Potato Curry

Creating this aromatic and delightful Vegan Thai Green Sweet Potato Curry is a straightforward and rewarding process. The key lies in layering flavors and textures to achieve that authentic Thai taste. Here’s a detailed guide to bringing this incredible dish to life:

Essential Ingredients for a Flavorful Foundation:

Start by gathering your core ingredients. The beauty of this recipe is its flexibility, but these foundational elements ensure a truly spectacular curry:

  • Sweet Potatoes: These vibrant tubers lend a natural sweetness and creamy texture, making them a perfect base for the curry. Their robust nature stands up well to simmering.
  • Spinach: A last-minute addition, spinach quickly wilts into the curry, adding a boost of nutrients and a lovely green hue.
  • Green Beans: For a pleasant crisp-tender bite and a fresh green element.
  • Shallots: Milder and more delicate than onions, shallots provide a foundational aromatic sweetness when sautéed.
  • Ginger & Garlic: The quintessential aromatic duo in many Asian cuisines, infusing the curry with their pungent, warming flavors.
  • Vegetable Broth: Forms the liquid base for simmering the vegetables.
  • Coconut Milk: The heart of any Thai curry, providing luscious creaminess and richness. You can choose regular or light, depending on your preference.
  • Green Curry Paste: This is where the “Thai” magic happens! A good quality green curry paste is crucial for authentic flavor.
  • Fresh Cilantro: For a burst of freshness and a beautiful garnish.
  • Lime Juice: A squeeze of fresh lime juice at the end brightens all the flavors and adds a tangy zest.
  • Salt or Vegan “Fish” Sauce: To season and provide umami.

Creative Substitutions to Customize Your Curry:

Don’t have every ingredient on hand? No problem! This curry is incredibly forgiving. Feel free to experiment with these delicious swaps:

  • Instead of Sweet Potatoes: Try butternut squash, regular potatoes, or even pumpkin for a similar hearty base.
  • In place of Spinach: Swiss chard, kale, or bok choy work wonderfully. Just add them towards the end of cooking until wilted.
  • For Green Beans: Broccoli florets, asparagus spears, snap peas, or even zucchini chunks can be used. Adjust cooking times as needed.
  • If you don’t have Shallots: A small yellow onion, finely diced, can be used as a substitute.
  • Add More Veggies: Carrots, peas, bell peppers, cauliflower, or mushrooms are all fantastic additions that boost flavor and nutrition.
  • Protein Boost: For added substance, stir in cubes of firm or extra-firm tofu during the last few minutes of simmering to heat through and absorb the curry flavors.
  • Spice it Up: If you love heat, add an extra sliced fresh chile (like a bird’s eye chili) along with the ginger and garlic.

Step-by-Step Cooking Method:

  1. Aromatics First: Begin by heating your chosen oil (coconut or canola) in a large skillet or Dutch oven over medium-high heat. Add the quartered shallots and reduce the heat to medium. Sauté them gently for about 4-5 minutes until they become wonderfully soft and translucent, releasing their sweet aroma.
  2. Infuse with Ginger and Garlic: Introduce the minced ginger and garlic to the softened shallots. Sauté for another 30 seconds to a minute, just until they become fragrant. Be careful not to burn the garlic, as this can make it bitter. This step is crucial for building a deep flavor base for your curry.
  3. Simmer the Sweet Potatoes: Pour in the vegetable broth. If using a can of broth that’s just shy of 2 cups, top it up with a little water. Add the diced sweet potatoes. Bring the mixture to a gentle boil, then reduce the heat to medium and let it simmer. Cook for approximately 6-8 minutes, or until the sweet potatoes are about halfway cooked through – they should be slightly tender but still firm.
  4. Add Green Beans: Now, add the trimmed and halved green beans to the simmering curry. Continue to cook for another 3-4 minutes. At this point, the sweet potatoes should be easily pierced with a knife, and the green beans should be just tender-crisp, maintaining some of their vibrant color and texture.

  1. Wilt the Spinach: Stir in the baby spinach. Cook for just 1-2 minutes, allowing the spinach to gently wilt into the curry, absorbing the delicious flavors.
  2. Finish with Creaminess and Curry: Turn off the heat. Stir in the rich coconut milk and the fragrant green curry paste. Gently bring the curry back to a simmer over low heat, allowing it to warm through thoroughly. This ensures the coconut milk doesn’t curdle and the curry paste’s flavors meld beautifully.
  3. Brighten and Season: Finally, stir in the fresh chopped cilantro and a generous squeeze of lime juice. Taste and season with salt or vegan “fish” sauce as needed. The lime juice is essential for brightening the overall flavor profile.

And there you have it – a remarkably satisfying, nutrient-rich, and incredibly versatile plant-based meal ready to be enjoyed! This Vegan Thai Green Sweet Potato Curry proves that wholesome eating can be utterly delicious and deeply comforting.

Choosing the Right Green Curry Paste:

While making your own green curry paste from scratch can be a rewarding endeavor, it often requires a trip to an international market for specialized ingredients like galangal, kaffir lime zest, and specific chilies. For convenience without sacrificing authentic flavor, a high-quality store-bought green curry paste is an excellent choice. After much culinary exploration, I wholeheartedly recommend Maesri brand. Their green curry paste delivers an exceptional depth of flavor and a perfect balance of spices, making it my go-to for authentic Thai curries. Using a good paste significantly elevates the taste of your homemade curry, ensuring it rivals your favorite takeout.

Serving Your Vegan Thai Green Sweet Potato Curry:

To fully appreciate the rich flavors of this curry, serve it alongside fluffy white or brown jasmine rice. The rice acts as a perfect canvas, soaking up every drop of the aromatic sauce. Garnish generously with fresh cilantro sprigs and a few lime wedges, allowing everyone to add an extra squeeze of citrus to their liking. For an added touch of texture, a sprinkle of toasted cashews or peanuts can be a delightful addition. Enjoy this vibrant and comforting dish – it’s simply delicious!

Equipment

  • Wusthof Chef Knife
  • Cutting Board
  • Enameled Cast Iron Skillet
  • Maesri Thai Green Curry Paste

Ingredients

  • 2 tablespoons canola or coconut oil
  • 6 medium shallots, peeled and quartered vertically
  • 1 tablespoon minced ginger
  • 4 cloves garlic, minced
  • 2 cups vegetable broth, or 1 can with enough water added to make 2 cups
  • 3 medium sweet potatoes, peeled and cut into 1/2-inch cubes (approximately 4 cups)
  • 1 handful green beans, trimmed and halved widthwise (approximately 1 cup)
  • 1 container (5-ounce) baby spinach
  • 1 can (14-ounce) coconut milk, regular or light
  • 1 can (4-ounce) green curry paste, preferably Maesri brand
  • 1/2 cup chopped fresh cilantro
  • Lime juice, to taste
  • Salt or vegan “fish” sauce
  • Jasmine rice, for serving

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the shallots, reduce heat to medium and cook until shallots soften, approximately 4-5 minutes.
  3. Add the ginger and garlic and cook briefly, 30 seconds or until fragrant.
  4. Add the vegetable broth and the sweet potatoes. Bring to a boil then reduce heat to medium. Cook until the potatoes are half-cooked, approximately 6-8 minutes.
  5. Add the green beans and continue cooking another 3-4 minutes or until the potatoes can be easily pierced with a small knife.
  6. Add the spinach and cook 1-2 minutes or until wilted.
  7. Turn off the heat and add the coconut milk and green curry paste. Gently bring back up to a simmer to heat through.
  8. Add the cilantro, lime juice, salt or vegan “fish” sauce to taste.
  9. Serve with jasmine rice.

Notes

SUBSTITUTES:

  • Can also be made with regular potatoes or butternut squash instead of sweet potatoes.
  • Use broccoli or snap peas in place of green beans.

TIP:

  • You can save time by buying the vegetables already prepped or by visiting the store’s salad bar. However, you’ll be paying extra for the convenience.

REHEATING INSTRUCTIONS:

  • Reheat leftovers on the stovetop or in the microwave.

FREEZER-FRIENDLY:

  • Anything can be frozen, but you have to consider the frozen-then-thawed result. After thawing, the vegetables will be more watery, which waters down the curry’s flavor. If freezing is your objective, add more curry paste to start or have some on hand to add after thawing.
  • Thaw in the refrigerator or microwave, then reheat on the stovetop or microwave.
