Why This Marry Me Chicken Recipe is a Keeper!

The “Marry Me Chicken” phenomenon has taken the culinary world by storm, gracing countless websites and food blogs with its irresistible allure. Intrigued by its widespread popularity, I embarked on a journey to understand what makes this dish so universally adored. What I discovered is a harmonious blend of flavors and textures that elevate simple ingredients into something truly extraordinary.

At its core, Marry Me Chicken features tender, boneless, skinless chicken breasts enveloped in a rich, creamy, and cheesy pan sauce. This luscious sauce is infused with the sweet-tart intensity of sun-dried tomatoes, aromatic herbs like oregano, and a subtle warmth from crushed red pepper flakes. The combination is undeniably delicious and deeply satisfying, offering a gourmet experience from the comfort of your home kitchen.

Interestingly, I couldn’t help but smile when I first encountered the ingredients for this internet sensation. For over two decades, I’ve been crafting a remarkably similar sun-dried tomato chicken dish for my personal chef clients, long before it earned its charming moniker. This personal connection only deepens my appreciation for the recipe’s timeless appeal and robust flavor profile.

Whether you’re celebrating an anniversary, planning a romantic dinner, or simply want to show appreciation to your sweetheart, this version of Marry Me Chicken promises to deliver. It’s more than just a meal; it’s an experience designed to delight and impress.

This particular Marry Me Chicken recipe for two stands out because it is:

  • Effortlessly Easy: Despite its sophisticated flavor, this dish is surprisingly simple to prepare, making it accessible even for novice cooks.
  • Rich and Decadent: The creamy Parmesan sauce and succulent chicken create an indulgent meal that feels incredibly luxurious.
  • Remarkably Quick: From start to finish, you can have this exquisite dinner on the table in approximately 30 minutes, perfect for busy weeknights.
  • Perfectly Scaled for Two: Unlike many recipes that yield four or more servings, this recipe is meticulously tailored for a romantic dinner for two. While it’s easy to double for a larger crowd, we highly recommend enjoying it fresh, as the cream sauce does not reheat optimally without compromising its texture and consistency. This focus on fresh preparation ensures the best possible dining experience.

Ingredient Notes and Smart Substitutions:

  • Chicken Breasts: Boneless, skinless chicken breast halves are the traditional choice for Marry Me Chicken due to their quick cooking time and lean texture. However, don’t hesitate to opt for boneless, skinless chicken thighs if you prefer; they offer a slightly richer flavor and can be more budget-friendly. If using thighs, increase the cooking time by 1-2 minutes and always ensure they reach an internal temperature of 165°F (74°C) for food safety.
  • Shallot: A culinary gem, shallots belong to the onion family but offer a milder, more delicate oniony flavor with a subtle hint of garlic. They grow in clusters, similar to garlic, contributing depth without overpowering the dish. If shallots are unavailable, a small amount of finely minced regular yellow onion can be used as a substitute, though the flavor will be slightly stronger.
  • Sun-Dried Tomatoes: These intensely flavored tomatoes are created by dehydrating ripe tomatoes, a process that concentrates their sweet, tangy, and savory notes. For convenience and optimal flavor, we highly recommend using sun-dried tomatoes packed in oil, as they are plump, tender, and ready to use. If you opt for dry-packed sun-dried tomatoes, remember to rehydrate them in hot tap water for 20 to 30 minutes until softened before chopping.
  • Dry White Wine: A good quality dry white wine, one that you would happily drink on its own, is crucial for deglazing the pan and adding a layer of sophisticated flavor to the sauce. Choices like Sauvignon Blanc, Pinot Grigio, or Chardonnay (un-oaked) work wonderfully.
    • NON-ALCOHOLIC SUBSTITUTION: If you prefer to cook without alcohol, you can use an alcohol-free white wine alternative. Alternatively, substitute with extra chicken broth combined with a tablespoon of white wine vinegar or lemon juice to mimic the acidity and complexity.
  • Heavy Cream: The secret to the luxurious, velvety texture of this Marry Me Chicken sauce lies in using heavy cream (also known as heavy whipping cream). This type of cream has a higher fat content, which allows it to thicken beautifully without needing additional agents. Avoid using “whipping cream” which has less fat and may result in a thinner sauce. If you must use half-and-half or a lower-fat cream, you may need to whisk in a small amount of cornstarch slurry (cornstarch mixed with an equal part of cold water) or flour to achieve the desired consistency.
  • Parmesan Cheese: Freshly grated Parmesan cheese is non-negotiable for the best flavor and melt. If grating yourself, aim for a very fine texture so it blends seamlessly into the sauce. If using pre-shredded Parmesan, chopping it a bit more finely before adding can help it melt more smoothly and prevent a grainy texture. The quality of your Parmesan directly impacts the depth of flavor in your sauce.

Detailed Step-By-Step Cooking Instructions:

  • Begin by ensuring all your ingredients are measured, chopped, and ready to go. This practice, known as “mise en place,” streamlines the cooking process.
  • Thoroughly pat the chicken breasts dry with paper towels. This crucial step helps achieve a beautiful sear and prevents steaming. Season both sides generously with salt and freshly ground black pepper.
  • Heat the olive oil in a large skillet or sauté pan over medium-high heat. You’ll know it’s ready when the oil is hot and shimmering, indicating it’s reached the ideal temperature for searing.
  • Carefully place the seasoned chicken breasts into the hot oil, presenting the smoother, more attractive side down first. Cook without disturbing for approximately 4 to 5 minutes, allowing a rich golden-brown crust to form. Flip the chicken and continue cooking for another 4 to 5 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (74°C) in its thickest part. Transfer the cooked chicken to a clean plate and loosely tent it with aluminum foil to keep it warm and allow the juices to redistribute.

  • Reduce the heat to medium-low. Add the finely chopped shallot to the same pan, scraping up any browned bits (fond) from the bottom. Cook for 2 to 3 minutes, stirring occasionally, until the shallot is softened and translucent. If the shallot appears to be browning too quickly or sticking, add a tiny splash of water or chicken broth to prevent burning. The shallot will absorb some color from the fond, which is desirable, but you want to avoid dark browning or burning.
  • Stir in the minced garlic and cook for a brief 10 seconds, or just until fragrant. Be careful not to burn the garlic, as it can quickly turn bitter.

  • Pour in the dry white wine. Increase the heat slightly and bring the liquid to a boil, actively stirring and scraping the bottom of the pan to deglaze it. This process releases all the flavorful browned bits (fond) that have accumulated, adding immense depth to your sauce. Allow the wine to simmer and reduce slightly for 1-2 minutes.

  • Bring the mixture to a gentle boil, then reduce the heat to medium. Simmer the sauce for about 5 minutes, allowing it to slightly reduce and thicken to a luxurious consistency.

  • Stir in the freshly grated Parmesan cheese until it is completely melted and smoothly incorporated into the sauce. At this point, the sauce should be thick enough that if you run a spatula or spoon through it, the path will not immediately fill back in, indicating the perfect consistency.

  • Gently fold in the thinly sliced fresh basil. This adds a wonderful aromatic freshness.
  • Taste the sauce and adjust seasonings as needed with additional salt and black pepper. If the sauce tastes a bit too sweet from the sun-dried tomatoes, a tablespoon or two of additional dry white wine can help balance the flavors beautifully.

  • Slice the reserved cooked chicken breasts into medallions or strips. Carefully return the sliced chicken to the skillet, nestling it into the creamy sauce. Simmer briefly over low heat for just a minute or two to ensure the chicken is heated through to a safe internal temperature of 165°F (74°C).

Chef Tips and Tricks for Perfect Marry Me Chicken:

  • Achieving the Perfect Sear: When searing any protein, including boneless, skinless chicken breasts, always start with the “presentation” side facing down first. For chicken breasts, this is typically the smoother, flatter side. Place it in the hot oil and resist the urge to move or flip it until it has developed a beautiful, deep golden-brown crust. This initial sear locks in flavor and creates an appealing visual.
  • Mastering Sauce Consistency: To effectively assess the thickness or viscosity of your cream sauce, simply run a spatula or the back of a spoon through it. If the path you’ve created immediately fills back in, the sauce is quite thin. If there’s a noticeable delay before the path closes (as demonstrated in the accompanying photos), you’ve achieved the perfect, luscious consistency. A significant delay indicates the sauce is too thick and may need a splash of broth or wine to thin it slightly.
  • Enhanced Serving Presentation: After cooking, slicing the chicken breasts into elegant medallions or strips before returning them to the sauce serves multiple purposes. Firstly, it allows the chicken to reheat more quickly and evenly in the warm sauce, ensuring every bite is succulent. Secondly, it makes the dish much easier and more refined for your dining partner to enjoy, especially when served over pasta, as it eliminates the need for a knife. This thoughtful touch enhances the overall dining experience.

Marry Me Chicken Recipe FAQs: Your Questions Answered

Why is it called “Marry Me Chicken?”

The charming name “Marry Me Chicken” originated from the test kitchen crew and staff at Delish. While experimenting with a sautéed chicken dish featuring a rich, creamy sun-dried tomato and Parmesan sauce, the flavors were so exceptionally delicious that enthusiastic shouts of “I’d marry you for that chicken!” filled the air. The captivating taste and the playful, romantic sentiment quickly caught on, and the dish became known as the “marriage proposal material” chicken it is today.

Can Marry Me Chicken be made ahead of time?

While it might be tempting to prepare this dish in advance, we generally do not recommend it. Cream-based sauces, like the one in Marry Me Chicken, tend to lose their optimal texture and can sometimes “break” or separate upon reheating. Additionally, the vibrant color of the sauce begins to deepen almost immediately upon standing. For the best possible flavor, texture, and visual appeal, it is always best to cook and serve Marry Me Chicken fresh.

What can I use instead of sun-dried tomatoes?

If you don’t have sun-dried tomatoes on hand, or if you’re looking for an alternative flavor profile, roasted red bell peppers from a jar can be a lovely substitute. They will add a beautiful color and a sweet, smoky taste to the sauce. However, be aware that you will miss the unique sweet-tangy intensity and chewy texture that sun-dried tomatoes bring to the dish.

Is Marry Me Chicken gluten-free?

Yes, this Marry Me Chicken recipe is naturally gluten-free as written, provided you use gluten-free chicken broth and ensure your Parmesan cheese does not contain any hidden gluten additives. If serving with pasta, opt for gluten-free pasta to maintain the dish’s gluten-free status.

What kind of pan is best for this recipe?

A large, heavy-bottomed skillet or sauté pan is ideal for preparing Marry Me Chicken. Cast iron, stainless steel, or enameled cast iron pans work particularly well because they retain heat evenly, allowing for a consistent sear on the chicken and preventing the sauce from scorching. A pan with ample surface area is important for browning the chicken properly and for simmering the sauce without overcrowding.

Storage and Reheating Recommendations:

As mentioned, Marry Me Chicken is best enjoyed fresh. However, if you do find yourself with leftovers, refrigerate them promptly within two hours of cooking in an airtight container. When reheating, it’s best to do so gently. Place the chicken and sauce in a skillet over low heat on the stovetop, or in an oven-safe dish covered with foil, at 350°F (175°C) until heated through to 165°F (74°C). Be prepared for the sauce’s color to deepen significantly and its texture to be slightly altered compared to its freshly made state, as cream sauces can sometimes separate or become grainy upon reheating.

Equipment

  • Wusthof Chef Knife
  • Cutting Board
  • Enamel Cast Iron Skillet

Ingredients

  • 2 boneless skinless chicken breast halves
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons olive oil, or as needed
  • 1 medium shallot, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine, plus more to balance sweetness IF needed
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup drained and finely chopped oil-packed sun-dried tomatoes, *see note
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes, or to tolerance
  • 1/3 cup freshly grated Parmesan cheese, plus more for serving
  • 1 small sprig fresh basil (5-6 leaves), thinly sliced
  • Angel hair pasta, (optional, for serving)

Instructions

  1. Pat the chicken dry and season with salt and black pepper.
  2. Heat the olive oil in a large skillet or sauté pan over medium-high heat.
  3. When the oil is hot and shimmering, place the chicken breasts in the hot oil and cook until nicely browned on the first side, approximately 4-5 minutes. Flip the chicken and cook another 4-5 minutes or until the chicken is cooked through to 165°F (74°C) in the thickest part. Transfer to a plate and tent with aluminum foil to keep warm.
  4. Add the shallot to the same pan, reduce heat to medium-low, and cook for 2-3 minutes or until softened. (If necessary, add a little water or chicken broth to keep the shallot from burning. The shallot will take on the color of the fond, but you don’t want it to brown or burn.)
  5. Add the garlic and cook briefly until fragrant, approximately 10 seconds.
  6. Add the white wine and bring to a boil, stirring and scraping up all the browned bits (fond). Cook for 1-2 minutes or until the wine is slightly reduced.
  7. Add the chicken broth, heavy cream, sun-dried tomatoes, oregano, and crushed red pepper flakes.
  8. Bring to a boil, reduce heat to medium, and simmer for 5 minutes or until slightly reduced and thickened.
  9. Stir in the Parmesan cheese until it’s melted and blended into the sauce. (The sauce should now be thick enough that you can run a spatula or spoon through it and the path will not immediately fill in.)
  10. Stir in the fresh basil.
  11. Season with salt and black pepper to taste. Adjust the flavor balance with 1 to 2 tablespoons of additional dry white wine if the sauce tastes too sweet to you.
  12. Slice the chicken and carefully return the chicken to the skillet, nestling it into the sauce. Simmer briefly on low to bring it back up to the safe temperature of 165°F (74°C).
  13. Serve immediately over angel hair pasta if desired. Sprinkle with additional Parmesan cheese and fresh basil leaves for garnish.

Notes

SUBSTITUTIONS:

  • ALCOHOL-FREE SUBSTITUTION: Use an alcohol-free white wine or substitute with extra chicken broth combined with a tablespoon of white wine vinegar or lemon juice.

TIPS:

  • I highly recommend using sun-dried tomatoes packed in oil. If using dry-packed sun-dried tomatoes, you’ll need to rehydrate them in hot tap water for 20 to 30 minutes. Whichever kind you use, the sun-dried tomatoes should be chopped to yield 1/4 cup.
  • To effectively judge the thickness/viscosity of a sauce, run a spatula or spoon through it. If the path fills in immediately (right behind the spatula/spoon), it’s pretty thin. If there’s a delay as shown in the above photo, it’s the correct consistency. If there is a significant delay, the sauce is very thick.
  • Slicing the chicken and then adding it back to the sauce will enable it to heat back to the safe temperature of 165°F (74°C) faster. It’s also a little easier for your dining partner to enjoy—no need for a knife which can be awkward if served over pasta.
