- 1 envelope rapid rise yeast
- 1 1/2 teaspoons sugar
- 3/4 teaspoon salt
- 3 tablespoons canola oil, or vegetable or olive oil, plus more for the bowl and skillet
- 1 3/4 to 2 1/4 cups all-purpose flour, as needed

- 3/4 cup barbecue sauce, your favorite, divided
- 1 cup shredded Pepper Jack cheese, divided
- 1 cup shredded Mozzarella cheese, divided
- 1 (8-ounce) chicken breast, cooked and diced
